Cabbage = Yummy Sauerkraut!

This week we transplanted our two cabbage varieties from their pans and into the ground. The great thing about cabbages is that they are cold hardy, which means that during the early spring when there is still a risk of frosty weather they generally do just fine. A true freeze can harm them, of course, but cabbages usually do really well starting their growing journey in the early spring!

In addition to transplanting the cabbages (we chose the best 50 or 60 plants to put in the beds), we also started some other seeds, like:

  • slicing and paste tomatoes
  • spicy and slicing peppers
  • lettuces
  • herbs like basil, oregano, thyme, and many others
  • tomatillos
  • and more!

This year we haven’t yet gotten behind with planting (like we did last year because of all the wedding planning), which is encouraging news for us. For now, we await the cabbages and the delicious and nutritious sauerkraut this will result!

First Planting of 2015!

We’re really excited to have finally planted our first crops for the new year!

They have a temporary, cozy home… Set up in our guest bedroom with the chicks’ old heat lamp pointing at them, willing them into existence through the warmth and wetness that is their damp, soil filled tray! So poetic (can you tell we’re excited?)!

The first crops we’ve planted are both cabbages! Sauerkraut is not only one of our most favorite side dishes, is also super good for your body. Filled with plenty of healthy bacteria that promotes your digestive and intestinal health, it’s a “medicine” worth having around during all time of the year (especially during hot dog season).

We decide to great started right on time this year, since last year we waited too long to get some of our crops started. Planted a few days ago, the seeds have not yet sprouted, but it’s just a matter of time! We’ll allow them to grow in the their trays until they get a few leaves and/or until we think the threat of freezing has passes. Cabbage can take some chilly temperatures, but we want to be sure they grow up into large and delicious (multiple) cabbage heads!

The two varieties that we’ve planted are the Early Jersey and the Golden Acre. We’ll keep you posted about when these great varieties finally sprout!

first salad of the summer!

it’s a little late in the year for first salads, because this year it took us way too long to transplant our lettuce varieties into the soil. once they were transplanted, they quickly took off and i finally cut a few of our varieties for a salad this week. i mixed it with a few of our little cabbage heads and enjoyed the salad with a few other additions and salad dressing. so far, delicious!

cabbage: a salad and sauerkraut experience!

just the other day we harvested our first two cabbages from the garden. we were both surprised at how large they grew. we rescued them just in time–before the bugs really got them. for now, it looks like our other cabbages might not make it past the bugs.

but we’re glad to have gotten two of them to eat! we used the larger, nicer head for mixing into our salads and just simply munching. fresh cabbage sure is wonderful!

we cut the other head up into small strips and jason is using it for our first batch of lacto-fermented sauerkraut. my aunt makes awesome sauerkraut and she’s actually made some for our wedding (out of red cabbage). we can’t wait to try it! in the meantime, jason continues to check the progress of our little sauerkraut batch to see when it is time to take it from room temperature to the fridge.

next up on the lacto-fermenting menu… tons and tons of pickled greenbeans! my favorite!
