Summer Chicken Processing & A Sale On Stevia

Stevia is actually a pretty cool herb, and is commonly used as a sugar substitute. When you grow your own stevia, you use the the leaves directly from the plant rather than the ultra-processed version that’s now popular in stores. It has 0 calories and adds excellent flavor and sweetness to any teas or other recipes. In fact, it can be ground up and added to baking to mimic the flavor and sweetness of sugar without any of the negative side effects of sugar!

Reflections on Processing Our Own Birds

Processing one’s own meat is a well-rounded homage to humanity. It honors our ancestry as big-brained scavenger/hunters and our current status as self-reflective stewards of the earth.

It requires physical, intellectual, emotional, and spiritual stamina.

It requires a love for science, a love for animals, a love for food, a love for those you plan to feed, and a love and respect for the life/death/life cycle that evolved humanity and all other creatures.

It’s difficult and tiring. It’s wonderful and absolutely fun. It’s a family affair. It’s a skill. It’s a day that always ends well when your nearly 3-year-old son spends the entire day catching chickens with you and still says “let’s keep working!” after the work is over and all is cleaned up and put away. It’s a family culture and a little legacy.

Plants & Animals Living Together on the Homestead

Summer is nearly here, and this often means that our edible plants and our pasture raised animals spend a lot of time in close proximity. Ducks and chickens often graze and forage under the shade of both small and large trees, and we use the ducks for weeding the garden edges and chickens for eating the seeded grasses that grow in open spaces.

Eat Like A Farmer—When Offal Isn’t Awful at All!

We mentioned this last week, but due to increased ordering, our inventory is getting lower than it usually does this time of year, before our first chicken processing. Never fear, June will bring a big growth in our offerings—and we’ll have chicken breast, thighs, drumsticks, and whole birds back in stock! The reason we can be sure to bring you increased meat options in June is because we process all of our birds on farm. If you’ve heard of the recent poultry plant shutdowns or long waits at existing processors, just know that these terrible circumstances don’t affect our farm operations at all. Once our baby birds arrive in early spring, all processing and handling happens with the two of us at our small homestead. The reason birds won’t be ready until June is because our first batch isn’t old enough yet—but they will be in a few more weeks. 🐓

It’s during times like these that we all get to eat like a farmer! Farmers often eat the weirder edible bits, the less popular cuts of meat, or the larger or older birds. One thing that we often find ourselves eating is organs—meaty hearts, shreddable gizzards, and nutrient dense liver. These bits are called offal—pronounced “awful”— but they sure don’t taste that way. They’re amazing when you know how to prepare them, and we always offer these bits for sale to you, but you may not have known that! Check in with us on Saturday about cooking technique and how you can really make the most of “eating like a farmer.” 👨🏻‍🌾👩🏼‍🌾

Chicken wings are still in stock for the next few weeks, and we know how you love wings, especially if you’re grilling out for Memorial Day! Wings can be the centerpiece of your celebration, even if it’s just with immediate family, and a food you know the whole family will enjoy—kids and adults alike.

Liver Like Never Before…
With the busyness that comes from COVID, we’ve sold out of a lot of our customers’ favorite cuts of meat. Don’t worry, ya’ll, we still have some delicious and nutritious cuts of meat for you! Let’s take a look at liver, which is a nutritional powerhouse, and one of our favorites!

Did you know that a 100g serving of chicken liver provides more than half of the recommended daily amount for iron?! One serving, around 3.5 oz of chicken liver, offers 172 calories, more than 100 of which come from protein. This serving also contains 25.8g of protein, which provides more than 40% of your recommended daily amount for protein.

Wonderfully, chicken liver is a complete protein because it contains ALL of the essential amino acids, which are those that your body cannot produce. One serving provides more than 50% of the requirement for all essential amino acids! One serving also

supplies more than 100% of the recommended amount of vitamin A, folate, pantothenic acid, riboflavin, and B12 and more than 50% of your daily needs of choline, vitamin B6, and niacin.

This makes liver an ideal food for pregnant and nursing women. Emma made sure to eat tons of pate during both of her pre-pregnancy journeys! People who eat Paleo or Weston A. Price diets can trust that our livers provide a healthful, clean, and nutrient dense energy source.

Many folks also enjoy feeding livers to their pets, especially those feeding a raw diet. Liver is certainly one food that your dog won’t turn down!

Chicken Necks? How Delicious!

Chicken necks may not be the first cut of meat you imagine when you think of chowing down on some delicious chicken, but they really make an excellent addition to any weekly food prep! Chicken necks make a pulled chicken dish super easy. Simply pressure cook the necks until your meat is soft but still adhering to the bones, and then peel your meat pieces and “toss” the bones. We often use the already-shredded meat for making BBQ chicken or a flavorful taco dish, complete with rice, beans, avocado, and our favorite other additions.

After peeling the meat from the bones, you can either “toss” the bones back in the broth you’ve made while cooking them (to cook them down further for any pets you have), or save that neck broth to use as a base for any sauces or soups you’re making. Chicken neck broth is rather gelatinous, because of the spinal cord and other good bits inside. It’s a nutrient dense addition to any recipe!

May 30: Our Last Drive-Thru Pickup Day

We wanted to give you a bit of a heads up, friends! As Emma gets bigger and being pregnant with twins gets more tiring, we’ve decided to take a break from offering our products for pickup in the Corner Farmers Market drive-thru beginning in June. Emma manages the drive-thru orders and the packaging, labeling, and invoicing is getting to be a bit tougher on her as her lungs decrease in capacity and her energy level drops (this twin pregnancy has been no joke, compared to her pregnancy with Uhtred!). 🤪

This means your last day to pickup at the drive-thru is Saturday, May 30. We will continue to welcome preorder pickups at our table, and we’re able to process payment in advance to make the exchange as contact free as possible. We’re sorry for any inconvenience this may cause, and we appreciate you for bearing with us during these big transitions of 2020. It’s Just Mint to Be!

We’ve talked a bit about our herb availability, but we haven’t shared our specific mint offerings! Right now, we have Kentucky Colonel mint, mojito mint (you know what that’s for!), orange mint, chocolate mint, peppermint, pineapple mint, and spearmint! Each is $5. 🌱

Mints are natural spreaders, and will colonize and take over a space if you let them. Be sure to choose your planting location accordingly. 🌿

They add fragrance to any garden and a refreshing flavor to any beverage or meal. They’re lovely when made into teas, mixed drinks, and more! Sweet and Ornamental Goumi!

Goumi is a semi evergreen shrub that can grow to be quite large, and has nitrogen fixing qualities in almost all soil types. Not only can it be considered ornamental, but it yields lots of small and juicy sweet-tart fruits as well! The goumi is partially self-fertile, but when two varieties are planted together the fruit yield is higher for both. They’re excellent when eaten fresh but they also stand out in jams and jellies! Plants are $28 each.

Here We Goji!

Goji berries are another unique fruiting plant, which are both cold and drought tolerant. They’re really popular in Chinese medicine and the berries can be eaten fresh but are usually dried, and leaves are used for tea. Fruits are sweet-tart and have have more carotene than carrots! The plants grow to be 5-6 feet tall and wide and have a long ripening and harvest period during midsummer. They’re self-fertile and $12 each.

The Amazing Sea Berry!

The fruit that Emma is the most excited about is the sea berry! They can grow to be quite large and grow lots of golden/orange fruits which are pretty tart/sour! Some folks like eating them fresh and others do not. The most amazing thing about sea berry (also called sea buckthorn) is how unique the plant is—providing unique nutrients and health benefits found in no other fruit. They’re nitrogen-fixing and high in essential fatty acids (which is unheard of among fruits). The fruit is used for unique anti-cancer and anti-radiation purposes and used in some skin products. Also, the leaves are leaves are high in protein and can be used for animal forage or made into teas. They’re really the superfood you’ve never heard of! Sea berry plants need both a male and a female for pollination, and the male does not make fruit. Each plant is $30 or you can grab 3 sea berries for $75 ($15  off).

Don’t forget that we’re accepting new CSA members for our Summer Duck Egg CSA which begins Tomorrow, on May 2! Duck Egg CSAs are offered for both dozens and half-dozens, and mean that you’re guaranteed eggs every week for 6 months (26 weeks). CSAs make picking up your weekly eggs super easy and convenient for everyone. Space is limited, so sign up now! Once available CSA spots are filled, no more will be available until next year!

Dozen and Half-Dozen CSA members save a dollar each week, and Dozen CSA members save 11% during the CSA period, while Half-Dozen CSA members save 18%! Plus, all CSA members get first dibs on our Winter Duck Egg CSA which runs from late fall through early spring when the ducks lay more infrequently.

A Special Homestead Surprise!

You may or may not know, but we’ve been expecting our second kid in August of this year. 🌱

Earlier this week we learned that instead of one kid, we’re getting two! Yes, it’s twins! It’s quite a shock since Emma doesn’t have any twins in her family (a variable which makes twins much more likely) and because we just never imagined two babies at once. 🦃 🦃

Also, what a funny time in our world to hear this news, right? It’s going to be a wild ride, and we’re pretty stoked. We’ll be continuing business as usual, except now both of us will have a baby strapped on our backs throughout all of it! 😆

Special “Drive-Thru” Corner Farmers Pickup Available This Saturday!

This week, our regular Saturday market (the Corner Farmers Market at 2200 Walker Ave, Greensboro 27403) will offer advance ordering and “drive-thru” style pick up during their Saturday market hours (9-noon). The market will also be sharing  a listing of the vendors who are able to take pre-orders so you can plan to restock without leaving your vehicle!

As of now, the market will continue to be set up this Saturday so you can still get the fresh produce, bread, eggs, meats and other items you need. They will continue to modify our layout to be as open, safe, and easy access as possible. They are monitoring the regulations for grocery providers and will adapt their set up and crowd flow to meet all recommended guidelines!

If you would like to participate in the drive-thru pickup for KW Homestead and/or KW Edible Landscaping Nursery poultry products or plants, please email your order to us at kwhomestead@gmail.com. We will respond with a confirmation and then send you a PayPal invoice for the products so that you can pay in advance.

For drive-thru pickup on Saturday, March 21st at the Corner Farmers Market (2200 Walker Ave, Greensboro 27403) orders must be placed via email by 5pm on Thursday the 19th, invoices will be sent out Friday morning, and all invoices must be paid by 5pm on Friday the 20th.

Our Spring 2020 Plant Availability & Dozens Have Returned!

We are so excited to introduce KW Edible Landscaping Nursery’s spring 2020 plant availability! It’s more extensive than last year’s selection, and all edible! Yes, every plant we have is edible in some form. This year, we’ve including pricing on this list, to help you in your purchase and landscape planning!

We’re super excited about this spring’s Tea Plants, Pomegranate, Almond, Pineapple Guava, Box Huckleberry, and Figs! And these are just a few offerings this season—we’d also like to draw your attention to our Perennial Vegetables & Native Wildflowers (see below) with loads of unique and quirky edibles and medicinals including Echinacea, Daylily, Prickly Pear Cactus, and more.

Check out these BEAUTIFUL tea plants, an amazing evergreen and type of Camelia that’s used most commonly for—you guessed it—making tea! If you buy any black, green, or white teas, this is the exact plant that imparts the classic tea flavor and caffeine profile that’s found in teas around the world. It’s official, the ducks are back in business! Their egg production has nearly doubled in the past few weeks (welcome spring!) and we’re back to offering both dozens ($9) and half-dozens ($5.50). Also, did you know—if you’re looking to stock up for a few weeks—that duck eggs store well in the fridge for at least 3 weeks? Eggs are a complete meal, easy to cook, and simple to store!

How to Thaw Meat and Poultry! Plus, These
Special Plants Will Be Available Soon…

Sometimes knowing just when to begin thawing your meats and poultry products can seem a little daunting. The great thing about frozen meat products is that you don’t have to worry about their short shelflife in the fridge! You can begin thawing our chicken or duck as soon as you purchase, or stick it in the freezer and save it for a rainy day. Plus, our birds are vacuum sealed in high quality, BPA-free bags that keep the product high-quality for quite a while.

As many of you know, all of our poultry products are frozen. The reason for this is because we don’t raise our pasture-raised birds year-round, and we have to ensure that we keep our inventory balanced to keep our family and our loyal customers stocked with great food throughout the year. Since all of our birds are raised on pasture—eating green plants and foraging during the growing season—there are a few months out of the year when we aren’t raising birds or processing and freezing any product. Having a supply of our frozen poultry means that you can grab your favorite cuts of meat year-round!

Because everything is frozen, it’s essential to know the best tactics for thawing your meat. We recommend two different techniques (details below). The first is a slow thaw,  and the second is a longer thaw needing less attention.

Also featured in this email, is a look at a couple exciting and special plants that we’ll be bringing to the market shortly! Plus, a feature on an awesome herbal flower that many folks drink in tea every day. Option 1: Slow Thaw Your Meat in the Fridge

The first, and perhaps easiest option for thawing your frozen meat is to place it in one of your fridge drawers or in a bowl in the fridge and let it slowly defrost over the course of a couple days. You’ll have to look into the amount of days or hours it takes to thaw meat—based on weight. For a product like a whole bird, keep in mind that larger birds will take longer than smaller birds. But, when thinking about thawing cuts of meat that might be thinner than a whole bird, remember that these cuts will thaw much faster then a thicker, denser product will. Depending on if you’re working with thin, boneless breasts or the thicker drumsticks, your thawing could take just one to two days in the fridge, depending on your fridge temperature. Happy cooking!

Option 2: Quick Thaw Your Meat in Cool Water

If you’d rather eat your meat today, there’s another option for you! As soon as you get home, place your frozen poultry product in a large bowl in your kitchen sink. Fill it up with the coolest tapwater, and continue running a small stream of water over the meat for at least a few hours. Keeping the water running displaces the colder water created by the thawing meat and keeps the temperature cool and within a safe range. Using this method, you’ll want to frequently check on the status of your meat… And once it’s thawed either go ahead and start cooking it or place it in the fridge!

Echinacea: An Herb for the Ages 

This year we have echinacea! A lovely ornamental and medicinal flower/herb, many parts of the plant can be used—generally in teas. It’s historically been used to fight infection or the relieve pain. It’s also commonly used as a respiratory aid and often used to relieve cold symptoms. Why not add another lovely and useful flower to your landscape? Ask us about how you can grab some echinacea!

Grow Your Own Shiitake & Oyster Mushrooms! Plus, Grab a Goose Egg…

Do you have dark, shady spot in your yard that just won’t grow anything but moss? Veggies and fruit trees won’t produce there, but did you know that’s the perfect location to grow your own gourmet mushrooms!

Mushroom logs are surprisingly easy to manage, thrive in the shade, are fun for the whole family, and an excellent way to get gourmet mushrooms that taste better than when you buy them in the store! First of all, did you know that most mushrooms thrive on dead hardwood trees? That’s why mushroom logs work so well! Mushrooms fruit cyclically which means that the spore colonizes the log and after a particularly wet period—and during certain seasons, you can see and reap the benefits of the fruit (aka the mushrooms!) This year we have inoculated mushroom logs for sale—shiitake and oyster mushrooms!

Why Raise Your Own Mushrooms?

Why raise your own mushrooms, you ask? There are a couple good reasons to make having your own mushroom logs worthwhile. First of all, most mushrooms that you buy in the store are raised in sawdust, as opposed to the mushroom’s natural homebase of hardwood trees and logs. This imparts a different flavor in the mushrooms and the difference can really be tasted when you raise your own.

Also, mushroom logs can be super low maintenance if you let them. You can manage them two different ways:
1) You can place them in a shady and moist location and let them bear fruit when they naturally would (in our climate typically twice per year in the Spring and Fall), or
2) You can more actively manage them and water/soak the logs to force them to fruit and harvest mushrooms 7-10 days later.

Whichever method you choose, be sure to keep your logs in a shady spot out of direct sun. Northern sides of buildings, under porches, and beneath evergreen trees and shrubs are all ideal locations. Keep them off the ground like you would firewood, and give them a sprinkle or soak if we have an extremely dry summer.

Glorious Goose Eggs!

Do you know what’s fun for brunch? A goose egg! Huge, with baseball-sized yolks, these eggs sure are fun to cook for the kids. Grab one before goose egg season is over!

Celebrate Those Geese, Come On! 

Since we’re looking at goose eggs this week, we decided to celebrate our veteran goose trio (pictured above)! Our geese live with our ducks, chickens, and turkeys year round and help protect them. Geese are super noisy and fussy and can scare away four-legged predators with their racket. They also deter aerial predators because of their size, and we’re grateful to have them on our homestead. We have a few breeds: African (2 pictured here), Chinese (1 pictured here), and Embden. They certainly make our days more lively and we can’t wait until Uhtred is old enough to raise his very own pet goose from a gosling! In the meantime, we wish our goose trio good health and green grass!

A Little Bit of Love!

Today is the day of love, but we’re also celebrating liver this week because of its nutrient dense goodness—which might just be the boost we all need to get us through the last weeks of winter. Broth is also on our menu, as well as crispy chicken thighs! And just a heads up—the ducks are producing less this week so we’ll continue offering half-dozens only.

Celebrating Liver: A Nutritional Powerhouse

Did you know that a 100g serving of chicken liver provides more than half of the recommended daily amount for iron?!

One serving, around 3.5 oz of chicken liver, offers 172 calories, more than 100 of which come from protein! This serving contains 25.8g of protein, which provides more than 40% of your recommended daily amount for protein.

Wonderfully, chicken liver is a complete protein because it contains ALL of the essential amino acids, which are those that your body cannot produce. One serving provides more than 50% of the requirement for all essential amino acids!

One serving also supplies more than 100% of the recommended amount of vitamin A, folate, pantothenic acid, riboflavin, and B12 and more than 50% of your daily needs of choline, vitamin B6, and niacin.

This makes liver an ideal food for pregnant and nursing women. Emma made sure to eat tons of pate during both of her pre-pregnancy journeys! People who eat Paleo or Weston A. Price diets can trust that our livers provide a healthful, clean, and nutrient dense energy source.

Many folks also enjoy feeding livers to their pets, especially those feeding a raw diet. Liver is certainly one food that your dog won’t turn down!

Our two favorite ways to cook with liver are by creating a pate with butter and spices and by making a liver dumpling soup. Both methods have their merits, with the dumpling soup perhaps better suited for folks who don’t love the taste of liver.

Spray Free, Organic Christmas Trees Return!

Did you know that in NC, 90-99% of Christmas Tree farms spray Roundup and other toxic substances around their trees? Damn and damn!

Horrible, right? This is one reason why, for years, we’ve opted for wild foraged trees from our land and before that—from the land of family members. Not only are our trees quirky, open-branched (great for seeing all of your ornaments), and great smelling, they’re also spray free and organic. Emma‘s mom‘s asthma acted up every Christmas when Emma was a child, and once her family started choosing foraged trees from their land, she had no further issues at Christmas. If you are concerned about the food you eat and the substances you touch, consider thinking twice about where you get your Christmas tree this year. Family pets, young children, and others spend a lot of time interacting with your Christmas tree—making them at a higher risk for touching whatever toxic residues may be left behind.

We encourage you to think organic for your Christmas trees, too! 😉 We’ll have more trees of various sizes at the market tomorrow!

A Perfect Gift for the Plant Lovers on Your List!

Sometimes it’s tough to find the perfect gift for that green thumbed relative you find so special. The great news is that we can help you with that! Emma‘s mom has been making her unique and one-of-a-kind okra ornaments for over 25 years and the creative process takes a couple years to complete!
